OLIO EXTRA VERGINE DI OLIVA “TERRA”
It is the par excellence extra virgin olive oil of the Salento region, which is extracted from two of the oldest indigenous, semi-wild varieties of olives: the Cellina (Nardò) and the Ogliarola (Lecce). It is a fruity olive oil with absolutely no flaws. It has an excellent olfactory and gustatory harmony, with pleasant notes that are reminiscent of olive leaves, almonds and artichokes. Its taste is also characterized by fragrances that are typical of several indigenous varieties, and reminiscent of soft fruit (blackberry and raspberry). It matches well with Salento’s traditional dishes, such as mashed broad beans and wild chicory, legumes, cooked vegetables, as well as red meat and grilled fish. It has a green-straw yellow colour. In Salento’s recipes, the olives are also used in the “puccia”, durum-wheat bread typical of the region, or in the “pizzo”, i.e. bread with tomatoes and onions. They are also ideal with fresh cheese.
